8-10 radishes, cut in half
2 tablespoons Extra Virgin Olive Oil
3 tablespoon anchovy butter
Salt & pepper to taste
A small handful of pea shoots
2 green onion shoots, finely chopped
1/2 cup unsalted butter, softened
4 anchovies, finely chopped
3 garlic cloves, minced
1/2 teaspoon smoked paprika
1/2 teaspoon lemon juice

Mix 1/2 cup softened butter with the anchovies, minced garlic, smoked paprika, salt, pepper & lemon juice. Anchovy butter can be made days ahead and left in the refrigerator for future use.
Finely chop two shoots of green onion, dark green parts only.
Heat olive oil over medium heat in a medium-sized skillet. Once oil gets really hot, sauté radishes for about 2-3 minutes, until they start to soften. Season radishes with salt & pepper.
Add three tablespoons anchovy butter & mix radishes around until fully coated.
Remove from heat & transfer to a bowl or deep plate. Spoon remainder butter sauce over radishes.
Garnish with pea shoots & green onion. Best served with a piece of crunchy sourdough or bread of your choice to sop up all the buttery goodness!
