Cardamom, Date and Walnut Banana Bread
Ingredients
1 & 1/3 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cardamom [1/2 teaspoon if you only want a subtle cardamom flavor]
1/2 teaspoon cinnamon
1/4 teaspoon ginger
2 ripe bananas
1/2 cup brown sugar
1/4 cup maple syrup
1/2 cup unsalted butter, melted
1/3 cup greek yogurt
2 large eggs
1 teaspoon vanilla
1/2 cup chopped dates
1/2 cup chopped walnuts

Cook time: 1 hour
Total time: 1 hour & 20 minutes
Servings: 1 9x5 loaf
Steps
Preheat oven to 325 [F] degrees & grease a 9x5 loaf pan.
Roughly chop dates & walnuts.
In a bowl, mix together all purpose flour, baking soda, salt, cardamom, ginger, & cinnamon & set aside.
In a small bowl, mash together ripe bananas & set aside.
In another larger bowl, whisk together brown sugar, maple syrup & melted butter. Add mashed bananas to butter & sugar mixture & whisk until combined.
Add greek yogurt, vanilla & eggs to wet mixture & whisk until smooth.
Combine dry & wet ingredients, gently mixing with a spatula until incorporated.
Gently fold in chopped dates & walnuts.
Pour batter into greased loaf pan & bake for 1 hour or until top is browned & a toothpick comes out clean when stuck into loaf. Cover with tin foil while baking if top is browning quickly.
Let banana bread rest until the pan is cool enough to touch & flip loaf onto a plate & enjoy!
