Greek-style Panzanella with Za'atar Toasted Croutons

Ingredients

  1. 1 small baguette

  2. 3 tablespoons extra virgin olive oil

  3. 1 teaspoon za’atar

  4. 1 large heirloom tomato

  5. 1/2 cucumber

  6. 1/4 red onion

  7. 1/8 cup pitted green olives

  8. 1/4 cup crumbled feta cheese

  9. 1/2 lemon

  10. 1 teaspoon sesame seeds

  11. A small handful of fresh parsley, roughly chopped

  12. Salt & pepper to taste

Cook time: 5 minutes

Total time: 20 minutes

Steps

  1. Cut Baguette into medium-sized cubes, about 1 inch each.

  2. Mix together 1 tablespoon olive oil with 1 teaspoon za’atar & a pinch of salt & pepper. With a cooking brush or a small spoon, lightly coat each baguette cube with the seasoned olive oil.

  3. Lightly toast your bread in a toaster oven until golden brown. If using a regularly oven, preheat to 350 degrees [F] & toast until golden brown, making sure to check on bread periodically to preventing burning.

  4. While bread is toasting, dice up the heirloom tomato & cucumber into medium-sized cubes.

  5. Thinly slice 1/4 red onion & cut 1/8 cup pitted green olives in half.

  6. Once bread is toasted golden brown & cooled, mix together with tomato, cucumber, red onion & green olives. Drizzle 2 tablespoons olive oil & the juice of 1/2 lemon & mix together.

  7. Season panzanella with salt & pepper to taste.

  8. Garnish with crumbled feta cheese, sesame seeds & parsley.
