Key Lime Dark Chocolate Chip No Churn Ice Cream
Ingredients
1/2 cup key lime juice [from about 12-13 key limes] *can sub with regular lime juice
Zest of 5 key limes [or 1 & a half regular limes]
1 [14 oz] can sweetened condensed milk
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 cups heavy whipping cream
5 graham cracker sheets, crumbled
1/2 cup dark chocolate chips or 4 oz roughly chopped dark chocolate bar
Prep time: 20 minutes
Freeze time: 6 hours minimum
Total time: 6 & a half hours or up to one day
Servings: 16-18 servings [1 loaf pan]
Steps
Crush 5 full graham cracker sheets & set aside.
Crush dark chocolate chips or roughly chop a dark chocolate bar.
Wash key limes & zest 5 of them in a medium bowl.
Juice 10 key limes into the bowl with the zest. Add one can of sweetened condensed milk, vanilla extract & salt. Mix all ingredients until just combined & then set aside.
In a large bowl using a hand mixer or stand mixer, whip heavy whipping cream until soft peaks form, about 2 minutes. Gently fold sweetened condensed milk mixture into the whipping cream.
To the ice cream mixture, add dark chocolate & graham cracker crumbs, reserving a little of the crumbs to top the ice cream before freezing. Mix gently until just combined.
In a loaf pan, add the ice cream & level with a spatula.
Top ice cream with the leftover graham cracker crumbs & cover with tinfoil before placing it in the freezer.
Let ice cream freeze for up to 6 hours of overnight before serving.
