Mussels and Linguine in Spicy Tomato Sauce

Ingredients

  1. 1 cup linguine

  2. 3 cloves garlic, minced

  3. 3 roma tomatoes, diced

  4. 7 tablespoons extra virgin olive oil

  5. 1 cup crushed tomatoes

  6. 1 teaspoon harissa paste

  7. 2/3 cups red wine

  8. 1 bay leaf

  9. 1/4 teaspoon red pepper flakes

  10. Salt & pepper to taste

  11. 1/2 pound fresh mussels

  12. Chopped parsley for garnish

  13. Crunchy bread [optional]


Prep time: 5 minutes

Cook time: 25 minutes

Total time: 30 minutes

Servings: 1 serving

Steps

  1. Boil water for the linguine. While water comes to a boil, dice garlic & tomatoes & pre-chop parsley for garnish.

  2. In a deep pot, heat olive oil & sauté garlic & tomatoes for a few minutes until fragrant.

  3. Add 1 cup crushed tomatoes to the pot along with red wine, harissa paste, red pepper flakes, salt, pepper & the bay leaf. Stir ingredients together & let simmer on medium heat until it starts to thicken & come to a boil.

  4. When sauce comes to a boil, lower heat a bit & add mussels. Once shells have opened, cook for 1-2 more minutes then remove from pot & place in a separate bowl.

  5. Once pasta is done cooking, drain & assemble in a bowl. Spoon over tomato sauce & arrange mussels on top.

  6. Garnish with chopped parsley & enjoy!
