Red Currant and Mandarin Salsa

  1. 1 container of red currants 

  2. 10-12 cherry tomatoes, quartered 

  3. 2 mandarin oranges, peeled & roughly chopped  

  4. Handful of mint

  5. Handful of cilantro 

  6. Zest of 1 lime & juice of 2 

  7. Generous pour of chile or jalapeño-infused extra virgin olive oil 

  8. Salt & pepper to taste

Steps

  1. Prepare salsa ingredients by chopping tomatoes, mandarin oranges & herbs.

  2. Zest one lime & juice 2.

  3. In a bowl, combine all ingredients & mix until well incorporated. Season with salt & pepper to taste.
