Red Currant and Mandarin Salsa
1 container of red currants
10-12 cherry tomatoes, quartered
2 mandarin oranges, peeled & roughly chopped
Handful of mint
Handful of cilantro
Zest of 1 lime & juice of 2
Generous pour of chile or jalapeño-infused extra virgin olive oil
Salt & pepper to taste

Prepare salsa ingredients by chopping tomatoes, mandarin oranges & herbs.
Zest one lime & juice 2.
In a bowl, combine all ingredients & mix until well incorporated. Season with salt & pepper to taste.
