Roasted Cabbage with Smoked Paprika Garlic Butter
Ingredients
1 medium head of green cabbage
3/4 cup salted butter, softened
1 tablespoon smoked paprika
2 garlic cloves, grated
Juice & zest of 1/4 a lemon, plus lemon wedges for serving
Salt & pepper to taste
2 tablespoons crumbled cotija cheese
2 tablespoons fried onions [store bought is perfectly fine!]
2 tablespoons chopped chives
Maldon salt for garnish [optional]

Steps
Let salted butter come to room temperature on the counter, about 30 minutes. Meanwhile, prep your other ingredients.
Chop chives & set aside.
Grate garlic cloves & combine with smoked paprika, salt, pepper & juice & zest of 1/4 a lemon. Set aside.
Line a baking tray with parchment paper.
Remove the outer layer of leaves on the cabbage head & wash to remove any excess dirt. Cut cabbage into wedges, then transfer to a baking tray & lightly season with salt & pepper. Set aside.
Once butter has softened, preheat the oven to 375 F degrees. Combine softened butter with spice, garlic & lemon mixture. Using a fork, mix to combine.
Using a pastry brush [a non-serrated knife also works], coat all sides of each cabbage wedge with butter.
Roast cabbage for 25 minutes until leaves are nicely browned & tender.
Plate cabbage wedges on a serving plate. Garnish with crumbled cotija cheese, fried onions, chopped chives & a pinch of maldon salt or any type of preferred salt. Serve with extra lemon wedges & enjoy!
