Roasted Cabbage with Smoked Paprika Garlic Butter

Ingredients

  1. 1 medium head of green cabbage

  2. 3/4 cup salted butter, softened

  3. 1 tablespoon smoked paprika

  4. 2 garlic cloves, grated

  5. Juice & zest of 1/4 a lemon, plus lemon wedges for serving

  6. Salt & pepper to taste

  7. 2 tablespoons crumbled cotija cheese

  8. 2 tablespoons fried onions [store bought is perfectly fine!]

  9. 2 tablespoons chopped chives

  10. Maldon salt for garnish [optional]

Cook time: 25 minutes

Total time: 1 hour & 5 minutes

Steps

  1. Let salted butter come to room temperature on the counter, about 30 minutes. Meanwhile, prep your other ingredients.

  2. Chop chives & set aside.

  3. Grate garlic cloves & combine with smoked paprika, salt, pepper & juice & zest of 1/4 a lemon. Set aside.

  4. Line a baking tray with parchment paper.

  5. Remove the outer layer of leaves on the cabbage head & wash to remove any excess dirt. Cut cabbage into wedges, then transfer to a baking tray & lightly season with salt & pepper. Set aside.

  6. Once butter has softened, preheat the oven to 375 F degrees. Combine softened butter with spice, garlic & lemon mixture. Using a fork, mix to combine.

  7. Using a pastry brush [a non-serrated knife also works], coat all sides of each cabbage wedge with butter.

  8. Roast cabbage for 25 minutes until leaves are nicely browned & tender.

  9. Plate cabbage wedges on a serving plate. Garnish with crumbled cotija cheese, fried onions, chopped chives & a pinch of maldon salt or any type of preferred salt. Serve with extra lemon wedges & enjoy!
