Whole Wheat Feta and Za'atar Crackers

Ingredients

  1. 1 & 1/2 cups all purpose flour

  2. 1 & 1/2 cups whole wheat flour

  3. 2 teaspoons salt & extra for garnish

  4. 4 tablespoons extra virgin olive oil

  5. 1 cup & 2 tablespoons water

  6. 1/2 cup crumbled feta

  7. 1/2 cup za’atar

Prep time: 45 minutes

Cook time: 25-30 minutes

Total time: about 1 hour & 15 minutes

Servings: about 150 crackers

*Crackers should be eaten between 3-5 days after being baked & stored in an air-tight container.

Steps

  1. In a large bowl, whisk together both flours & salt.

  2. Add the olive oil & the water to the dry ingredients & gently mix until just combined.

  3. Add in the crumbled feta & continue to mix with your hands until a sticky dough is formed. You may need to add more water depending on how dry your dough is. Make sure to scrape down the sides & bottom of the bowl to combine missing drying ingredients.

  4. Once dough is formed, form into a large ball & then divide in half. Set one half aside.

  5. Preheat oven to 450 [F] degrees.

  6. Very lightly flour a baking tray & set aside. If you have two baking trays, that will be helpful in shortening the baking process.

  7. Lightly flour a flat surface to roll out dough.

  8. Gently roll out one ball of dough until it is about 1/8 inch thick. The shape does not matter unless you wanter cleaner cut crackers.

  9. Once dough is rolled out, gently brush the entire surface with water.

  10. Generously sprinkle z'a’atar on the dough, making sure all edges are covered & there are no missing spots. I did not measure out how much za’atar I used for this recipe - as long as the entire surface of dough is covered, you will be fine.

  11. Next, sprinkle some extra salt on top of the za’atar.

  12. Using a small, sharp knife, gently cut dough into desired shapes. I cut mine in diamonds.

  13. Once cut, use a dinner knife or an off-set spatula to move crackers to floured baking tray & using a fork, lightly prick the middle of each cracker to prevent them from rising.

  14. Bake crackers for 12-15 minutes or until edges are browned & crispy.

  15. While the first batch of crackers are baking, repeat steps 6-13. Let crackers cool completely before eating.
