Coconut, Almond, and Pepita Chocolate Clusters

Ingredients

  1. 1/2 bag of semi-sweet chocolate chips

  2. 1 tablespoon coconut oil

  3. 2 1/2 cups brown rice crisps

  4. 1/4 cup finely chopped almonds

  5. 1/4 cup pepitas [plus more for garnish]

  6. 1/8 cup shredded coconut [plus more for garnish]

 

Prep time: 10 minutes

Chill time: 20 minutes

Total time: 30 minutes 

Servings: about 15 clusters

Steps

  1. Melt half a bag of semi-sweet chocolate chips & 1 tablespoon coconut oil in the microwave until smooth.

  2. While chocolate is melting, mix together brown rice crisps, chopped almonds, pepitas, & coconut shreds.

  3. When chocolate is melted, let cool for 10 seconds & fold into the dry mix until evenly coated.

  4. Using a spoon, scoop out rice puff, nut, & chocolate mix & form into cluster-like shapes on a parchment paper-lined baking tray.

  5. Sprinkle remaining pepitas & coconut shreds on top of clusters.

  6. Place clusters in the refrigerator for 20 minutes until cool & hardened.
