2 1/2 cups brown rice crisps
1/4 cup pepitas (& more for garnishing)
1/4 cup finely chopped almonds
1/8 cup shredded coconut (& more for garnishing)
1/2 bag of semi-sweet chocolate chips
1 tablespoon coconut oil

Chill time: 20 minutes
Total time: 30 minutes
Servings: about 15 clusters
Melt half a bag of semi-sweet chocolate chips & 1 tablespoon coconut oil in the microwave until smooth.
While chocolate is melting, mix together brown rice crisps, chopped almonds, pepitas, & coconut shreds.
When chocolate is melted, let cool for 10 seconds & fold into the dry mix until evenly coated.
Using a spoon, scoop out rice puff, nut, & chocolate mix & form into cluster-like shapes on a parchment paper-lined baking tray.
Sprinkle remaining pepitas & coconut shreds on top of clusters.
Place clusters in the refrigerator for 20 minutes until cool & hardened.
