Nectarine, Peach and Grilled Halloumi Salad

Ingredients

  1. 4 slices halloumi cheese

  2. 1 ripe nectarine, sliced

  3. 1 ripe peach, sliced

  4. 1/2 small jalapeno, thinly sliced

  5. 2 2adishes, thinly sliced

  6. 8 thin slices red onion

  7. 1 tablespoon finely chopped mint

  8. 1 teaspoon lime juice

  9. 1 teaspoon lime zest

  10. Pinch of smoked Malden salt [or regular coarse Sea Salt]

Prep time: 20 minutes

Total time: 20 minutes

Servings: 1 single serving salad

Steps

  1. Heat a cast iron pan on medium-high heat & grease with a bit of olive oil.

  2. Slice halloumi into 4 slices, about 1/2 inch thick. Once cast iron gets really hot, grill Halloumi until each side gets browned & crispy, about 3-4 minutes per side. Once grilled on both sides, set aside to cool.

  3. Thinly slice nectarine & peach.

  4. Using a mandoline or a very sharp small knife, thinly slice radishes & jalapeno.

  5. Thinly slice red onion until you have about 8 small, half-moon slices.

  6. Finely chop mint.

  7. Once all of your salad ingredients are prepared, assemble salad & dress with lime juice & grated lime zest.

  8. Garnish with smoked Malden salt & mint.
