Nectarine, Peach and Grilled Halloumi Salad
Ingredients
4 slices halloumi cheese
1 ripe nectarine, sliced
1 ripe peach, sliced
1/2 small jalapeno, thinly sliced
2 2adishes, thinly sliced
8 thin slices red onion
1 tablespoon finely chopped mint
1 teaspoon lime juice
1 teaspoon lime zest
Pinch of smoked Malden salt [or regular coarse Sea Salt]

Servings: 1 single serving salad
Steps
Heat a cast iron pan on medium-high heat & grease with a bit of olive oil.
Slice halloumi into 4 slices, about 1/2 inch thick. Once cast iron gets really hot, grill Halloumi until each side gets browned & crispy, about 3-4 minutes per side. Once grilled on both sides, set aside to cool.
Thinly slice nectarine & peach.
Using a mandoline or a very sharp small knife, thinly slice radishes & jalapeno.
Thinly slice red onion until you have about 8 small, half-moon slices.
Finely chop mint.
Once all of your salad ingredients are prepared, assemble salad & dress with lime juice & grated lime zest.
Garnish with smoked Malden salt & mint.
