1 ripe Nectarine
1 ripe Peach
4 slices Halloumi cheese
1/2 small Jalapeno
8 small slices Red Onion
1 tablespoon finely chopped Mint
1 teaspoon Lime juice
1 teaspoon Lime zest
Pinch of smoked Malden salt (or regular coarse Sea Salt)

Servings: 1 single serving salad
Heat a cast iron pan on medium-high heat & grease with a bit of olive oil.
Slice Halloumi into 4 slices, about 1/2 inch thick. Once cast iron gets really hot, grill Halloumi until each side gets browned & crispy, about 3-4 minutes per side. Once grilled on both sides, set aside to cool.
Thinly slice Nectarine & Peach.
Using a Mandoline or a very sharp small knife, thinly slice Radishes & Jalapeno.
Thinly slice Red Onion until you have about 8 small, half-moon slices.
Finely chop Mint.
Once all of your fixins are ready, assemble salad & dress with Lime juice & grated Lime zest.
Garnish with smoked Malden salt & Mint.
