Pumpkin Kugel with Brown Butter Sage Bread Crumbs
Ingredients

6 ounces egg noodles
1/4 cup (1/2 stick) salted butter, plus more for greasing pan
4 large eggs
1/4 cup maple syrup
1/3 cup cottage cheese
1/3 cup sour cream
1/3 cup pumpkin puree
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
Brown Butter Sage Bread Crumbs
1/2 cup bread crumbs
3 large sage leaves, thinly sliced
4 tablespoons salted butter, divided in half

Steps
Preheat the oven to 350 (F) degrees and while it preheats, boil a pot of water.
Next, butter a small casserole dish & set aside.
Once water comes to a boil, add your noodles to the pot & cook until just el dente, a few minutes.
Meanwhile, in a microwave-safe bowl, melt 1/2 stick of butter & let cool slightly.
Whisk together 4 eggs, maple syrup, cottage cheese, sour cream, pumpkin purée, vanilla & pumpkin pie spice. Mix until just combined.
Slowly whisk in cooled melted butter.
Strain your egg noodles & combine them with the egg, dairy & pumpkin mixture. Mix until just imbibed.
Transfer the egg noodles to a small casserole dish & bake for 35 minutes or until edges start to turn golden brown.
While the kugel bakes, melt 2 tablespoons butter & set aside.
Next, make the brown butter sage bread crumbs.
In a small saute pan over medium-high heat, melt the remaining 2 tablespoons butter & stir or swirl the butter frequently. Keep butter over the stove top until it starts to foam & brown. Once it’s a deep golden brown color, Add in the chopped sage leaves & bread crumbs & mix until combined.
Turn off stove & let bread crumbs cool.
Take the kugel out of the oven after 35 minutes & drizzle the melted butter over the top.
Next coat the kugel with the brown butter sage bread crumbs.
Pop the kugel back into the oven for 15-20 minutes or until bread crumb topping has browned & the kugel looks set.
Slice & serve while still hot. Kugel will last in the fridge for up to 3-4 days and in the freezer wrapped in plastic wrap for up to 2 months.
